Shan State is a fascinating popular attraction place in Myanmar. It is famous for not only because of its own unique traditional cuisine but also famous for the beautiful Inle Lake. The floating gardens at there are very awesome and you can see the people who row the boat with only one leg. In Shan state there are many traditional foods such as Shan fish rice cake, Mee shay (rice noodle soup), Shan tofu and etc.
Shan noodle is rice noodle dish traditional to the Shan race people of Myanmar. It is very simple and easy rice noodle with pork or chicken. Most of Myanmar people like it and it is one of the famous Myanmar foods. It can commonly eat as lunch or dinner or a kind of snack. There are different versions of this dish depend upon the different region. There are two style of Shan noodle: salad or pouring Chicken Soup or salad eats with sour mustard greens. So how to make the tasty Shan noodle by yourself? Here is a recipe for Shan noodle and everything you should know about Shan noodle for both locals and visitors. It is very easy to make it and let’s try together. You can make this with ground pork or chicken as well, but I choose pork. Let’s get started.
- 200 grams of chopped chicken (or) pork
- 1 pack of dried shan noodle
- 1 large onion (chopped and sliced)
- Chopped Garlic
- Chopped ginger
- 4 tomatoes
- 2 tablespoons of light soy sauce
- 2 tablespoon of soy bean paste
- 2 tablespoons of sugar
- 1 tablespoon of chili powder
- 4 tablespoon of mashed peanut,
- 3 tablespoon of cooking oil
- 1 teaspoon of turmeric powder.
- Fish Sauce
– Boiled some tomato with 1 cup of water and add salt. Then cook for about some minutes, just to loosen up the tomato skin. After that pour out the water and leave the tomatoes to cool.
-Meanwhile, chop the chicken into as small as you want. It should look almost like minced chicken. Add 2 tablespoons of soy sauce, salt and sugar mix well and keep aside.
-When the tomatoes are cool, remove the skin and discard. Cut the tomatoes in half and remove as much seeds as possible without removing any pulp. Discard the seeds, chop the tomatoes finely and keep aside.
-Boiled the rice noodles to be soft and after boiling dip the hot water and place the noodles in a bowl.
-Heat the pan with oil until hot. When the oil become hot, adds garlic, turmeric powder, chili powder and cook for a moment till to get fragrant. Then add chopped chicken and cook until cooked. Then cook together with chopped tomatoes, fish sauce, soy bean paste and 1 tablespoon of soy sauce.
-Stirring occasionally, cover and cook over medium heat for about 10 to 15 minutes until all tomatoes are crushed and the oil starts to separate from gravy. You should not need any water but if it is too dry, add some water. Turn off the heat and is ready to be served.
-Add your cooked rice noodles to your soup bowl. Ladle couple scoops of chicken gravy on top of noodles, Top it up with peanuts, crushed chili and 1 tablespoon of soy sauce (adjust to taste) and serve immediately. If you would like to taste the Soup style, then add broth to cover the noodles with all ingredients. Mix everything before eating then served with vegetable pickles and fried pork rind.
