Spanish foods are famous around the world because of it great cooking methods and variety of ingredients in their dish. One of the famous foods Paella is a traditional dish of Spain and currently an internationally known rice dish around the world. It is originated from a region called Valencia region which can be grown the rice on the eastern coast of Spain. Many non-Spaniards view paella as Spain’s national dish, but most Spaniards consider it to be a regional Valencia dish and regard paella as one of their identifying symbols.

Paella is a colorful mixture of saffron- flavored rice and various meats in the flat round pan in which is cooked. Most paella includes rice, chicken, shellfish, pork, saffron, rosemary, green peppers, green peas and simple spices, such as sea salt and bay leaf. This is a variation on traditional paellas, many of which are made with rabbit, seafood, chicken, beans and artichokes. While most regions of Spain have their own varieties, Spanish cooks said that well cooked rice and saffron which can turns the rice yellow are key ingredients. The traditional Paella is little similar with Biryani that we used to know. Traditionally, the paella is cooked out of doors, over a wood fire. This is definitely the queen of all tables of family gathering and occasional food in Spain and it attract both local and tourists.

There are many different varieties of ingredients in Paella and there are many different types of Paella according to its ingredients. They are the typical Spanish paella called Valencia paella, meat paella, seafood paella, mixed paella, black paella, white paella and vegetarian paella.

Valencia paella is a best known typical Spanish food prepared with tomato, pepper, onion and garlic and saffron. The premium meat of rabbit is commonly used for this dish and try it with a good wine is the perfect combination of Spanish flavour.

The main ingredients of meat and seafood paella are a good amount of black pepper and paprika seasoned with meat and seafood. For the meat paella, chicken is normally used and the seafood paella it usually prepared with squid, prawns, mussels and clams.

Mixed paella combines two flavors: Meat and seafood with meat safrito sauce. It is also one of the most popular dishes and is usually cooked in every house It has a very strong taste as the tender meat takes on the flavor of the seafood.

Black paella looks totally different from the other paella because the rice becomes black due to octopus or squid ink. The ingredients are the same as the seafood paella, but this additional affects not only appearance but also the taste is strong.

White paella is very simple dish to make and the ingredients that accompany in there are ham and salami. These are mixed without adding coloring, giving the dish a white appearance. It is usually served on many occasions as “tapas”, accompanying a beer.

The basic ingredients of vegetarian paella are: artichokes, asparagus, mushrooms and olives. It’s a different combination which doesn’t detract from the original dish and it is a light lunch.
